Chocolate Chip Cookies

So one of the things I love most are homemade chocolate chip cookies! I've been baking them from scratch since I was in high school (back when I could eat them all and not gain an ounce of fat...ah, memories...)

I actually haven't made them in a very long time. Although not too often, my daughter and I usually make cupcakes together when we bake since that's what she likes to do, but this time I decided to introduce her to my chocolate chip cookies.

Even though I reduce the amount of butter that might be used in several recipes, I found myself lacking butter AND sugar...so what was I going to do?

What I ended up doing may not be a surprise to you, but for those of you who have not tried trading out traditional ingredients for healthier ones, this could help you make that first step.

#1 thing to do in ALL recipes: use real, GRASS-FED butter. The butter comes from cows that eat grass (which is what they are supposed to eat), so they are healthier than the cows fed corn (or who knows what) or margarine. 

But I didn't have enough grass-fed butter! So what I did was use coconut oil for the rest of the missing butter πŸ™‚ I also used Truvia instead of regular, grandulated sugar. So the worst  ingredients are the choclolate chips themselves and the flour.

Here's my recipe:

1 tsp baking soda 

1tsp salt

2 1/4 cup flour (mix all dry ingredients before adding others); set aside


In separate bowl, mix Truvia (from Stevia plant; use what you want):

1/2 cup coconut oil; 1/2 cup butter

1 1/2 vanilla extract 

2 eggs (larger the better πŸ™‚ 

3/4 cup Truvia (sugar) 

3/4 cup brown sugar

then mix those together. Add in the flour mix, then add in in the chocolate chip morsels πŸ™‚

Place them on baking mat and bake in oven at 375 ! These should be read in 8-11 minutes πŸ™‚


They are so good! You can't taste the chocolate chips. ENJOY!!!!
