Christmas Corn

I just LOVE this! Hands down my favorite my favorite holiday dish! It even beats out the sweet potatoes with melted marshmallows (and that's hard to do!). It's  called Christmas Corn but we have it every Thanksgiving & Christmas.

This recipe has actually been in my family for 3 generations, maybe even longer, and I would really like to share it with you 🙂

Not only will you love the taste, but also the fact that it has the other 2 qualities I look for in food: easy, fast

and the BONUS quality: adjustable to your liking! You can use as-organic-as-you-can-find ingredients and even leave out anything you may not like (but it's all good!).

And it's served cold, so no need to bake, roast, grill or even re-heat!

If you are having 10 or more people, make the full recipe below. If you're having less, cut the recipe in half because it makes a lot.

Christmas Corn Ingredients:

3 cans Shoepeg white corn

1 small jar sliced green olives with red pimento, drained

1 large green pepper, chopped

2 bunches green onion, chopped

4 stalks celery, chopped

1 large jar diced pimento (red pepper)

1 bottle (large) Italian salad dressing


Directions:

Drain corn, olives and pimento. Clean and chop (get others to help with the chopping 😉 all fresh vegetables (red onion may be substituted for green onions). Combine all and add salad dressing (using low cal or fat-free is your call).

And that's it!

This great side of Christmas Corn will keep good for several days later, usually about 3-5 days in fridge 🙂
